Savory Squash Soup

1 tbsp Olive Oil
3 cloves Garlic
1 cup Onion
3 Bay Leaves
1 Winter Squash
1 1/2 tsp Sea Salt
1/2 tsp Black Pepper
1/4 tsp Paprika

Heat oil on medium-high heat. When oil is just about to smoke, add onions. Sautee for 2 minutes.

Add garlic and bay leaves. Sautee for 1 minute

Add water and squash. Reduce heat and simmer, covered, for 30 minutes or until squash is soft.

Puree with immersion blender or food processor. Return to pot. If a thicker consistency is desired, simmer until thickened. Add spices.
