Đồ Chua is a Vietnamese carrot-daikon pickle. While most recipes today involve pasteurizing in vinegar, ours is committed to the origins of Đồ Chua in raw fermentation. It is a live, probiotic pickle, not unlike sauerkraut or kimchi. Our Đồ Chua is made from organic carrots and daikons from Stick and Stone Farm (Trumansburg) and Mud Creek Farm (Victor).
