Today at Small World we had a first for the year; a vegan wedding cake tasting! Someone approached Luke at the Public Market recently and asked if we can bake vegan cakes, to which he replied "sure!" Apparently its hard to find a bakery in the area who's willing to take on a vegan wedding cake. Not us, though; we like to challenge ourselves. And trust me, pretty looking vegan frosting is a challenge. I must say, though, that over the past week I've been having a lot of fun trying out a bunch of different recipes. The future vegan bride requested a vanilla cake with either strawberry or lemon filling. Pictured is one of the first "cake sketches," which, if I do say so myself, tasted as good as it looks, if not better! The cake has applesauce in it as a binder instead of eggs, plus a couple other little tricks. The frosting is a vegan version of classic buttercream, although I'm not yet quite satisfied with it... so more tests to come, stay tuned!
